Why there is no single cups-to-grams number

A cup is a volume and a gram is a weight, so converting between them needs to know what is in the cup. Flour settles loosely and a cup of it is about 125 g. Granulated sugar packs tighter: 200 g. Honey is denser than either and barely holds air at all: 339 g. That is a spread of nearly three to one, which is why a single conversion factor cannot be right for a whole recipe — and why this tool converts each line using that ingredient's own density, taken from the same USDA data as everything else here.

Spoons are left alone, deliberately

Metric recipes say "1 tsp vanilla" too. Turning that into 4.2 g helps nobody: nothing in a domestic kitchen can weigh it, and the spoon is a measure everyone already owns. So small spoon measures survive the conversion untouched in both directions.

Which tablespoon?

A US tablespoon is 14.8 ml, a metric one is 15 ml, and an Australian tablespoon is 20 ml — a third larger, and enough to matter in a leavened bake. This tool assumes US customary measures, which is what US recipes and USDA data both use. If your recipe is Australian, write 20 ml rather than 1 tbsp and it will convert correctly.

An ounce and a fluid ounce are different units

They share a name and nothing else. An ounce is a weight — 28.35 g of anything at all. A fluid ounce is a volume: 29.6 ml, which weighs 29.6 g as water and about 21 g as oil. Recipes generally mean the weight for solids and the fluid ounce for liquids, and the two are converted separately here.

Rounded to what a kitchen can produce

There is no 3/8 cup measure, so cup fractions snap to the ladder that exists: eighth, quarter, third, half, two thirds, three quarters. Metric never grows a fraction, because a fraction of a gram is a rounding error with a slash in it.
